What is silk fibroin?
Silk fibroin has been developed as a new food material in cooperation with Dr. Takayuki Nagashima, Tokyo University of Agriculture.
Silk is composed of approx. 70% protein called fibroin and approx. 30% another protein called sericin. Silk fibroin is made only with pure fibroin protein extracted from silk. (Process patent)
Fibroin protein has a nano-level, complicated structure. It appears a porous or helical formation under atomic force microscope. And in theses dense cells, it has the function of fat absorption.
Serum Silk Fibroin is a new food material which is an unprecedented protein derived from worm silk using a nano-technology and developed by Dr. Serum co., Ltd. in cooperation with Dr. Takayuki Nagashima, Tokyo University of Agriculture.
■Difference between hydrolyzed silk and silk fibroin
Silk yields amino acid on hydrolysis. This amino acid has no functions of silk protein and is digested in the body, while silk fibroin is made by removing a protein called sericin from silk and reducing the molecular weight from 350,000-370,000 to 10,000-20,000 using ultra filtration technology.
